Wolf oven reads 375 and bakes like 315: reading the drift
When the panel and the rack disagree, the answer is almost never the control board. How to prove the drift with a probe, the three faults behind nearly all of it, and why calibrating first hides the problem instead of fixing it.

Every version of this call starts the same way: the panel says one thing, the food says another. It is worth knowing that on this equipment the answer is almost never the control board, and that the single most useful thing you can do before ringing anybody is turn a suspicion into a measurement.
What “sixty degrees under” usually means
A Wolf oven does not hold one temperature. It overshoots the setpoint, coasts down, and fires again — that cycle is the thermostat doing its job, and a swing of a dozen degrees either side is normal. What matters is where the middle of that swing sits.
When the middle sits well below setpoint, one of three things is happening. The oven is being told the wrong temperature by its sensor. It is being given less heat than it asks for. Or the heat is leaving faster than it arrives. Those are three different repairs, and they are distinguishable in about twenty minutes.
Prove it before you diagnose it
Do this before anything else, because it decides everything after it.
- Clear the cavity. Take out every rack except one in the middle. A stone or a steel left in there stores heat and will flatten the readings you are about to take.
- Put a probe on the middle rack, centred. A cabled probe thermometer with the lead out through the door seal is ideal. Not touching metal, not against the wall.
- Set 350 and watch the whole preheat. Note the time and the temperature when the oven says it has arrived. Then keep watching for twenty minutes more.
- Write down the pattern, not one number. Peak, trough, and roughly how long a cycle takes. That pattern is the diagnosis.
Three readings tell three different stories. If the oven climbs at a normal rate and then settles low and steady, suspect the sensor. If it climbs slowly and never really arrives, suspect the element or the gas side. If it arrives and then falls away faster than it should between cycles, suspect the seal or the fan path.
The three faults behind almost every drift
A drifted oven sensor. Head and shoulders the likeliest of the three. What sits in the cavity wall is a resistance-temperature device, and because its resistance tracks heat in a predictable way, a meter across it cold gives you a number to hold against spec — two minutes of work. That one reading is what separates a sensor from a control board, and a board is the expensive answer that gets sold to people whose sensor nobody bothered to measure.
A failing bake element or ignition on the gas side. An element that has blistered near a terminal still glows, so it looks fine, but it delivers less than it should. On a gas oven the equivalent is a weak igniter that lets the valve open late, or a burner that is not getting the pressure it needs. Both produce a slow climb rather than a low hold.
Heat leaving as fast as it arrives. A door seal that has gone hard at one corner, hinge springs that have relaxed so the door no longer pulls square, a convection fan that has slowed. These are the ones that read as uneven baking as much as cold baking, and they are the cheapest of the three to put right.
Calibration is a last resort, not a first one
Most Wolf ovens let you shift the offset a fixed amount. It is a real feature and it has a real use: correcting a small, stable, verified difference between a healthy oven and your baking preference.
It is not a fix for a fault. A sensor that has drifted twenty degrees this year will drift further next year, and you will be back in the menu. An element running below output does not care what offset you dialled in. Adjust the offset once the measurement says the oven is healthy — not to make a symptom quieter.
There is one Phoenix-specific version of all this worth mentioning. On convection steam ovens, hard valley water scales the steam circuit narrow inside a couple of years. The result is often read as a heat fault when it is a water fault: the cavity cannot make the steam it is asking for, so it never reaches the temperature the recipe assumed. Descaling the circuit, not recalibrating, is what fixes that one.
When it is worth the call
Ring if the pattern you wrote down shows a slow climb that never arrives, if the door is visibly not sitting square, or if the drift is more than about twenty-five degrees at the middle of the cycle. Ring straight away if the oven has thrown a fault code and latched the door, or if the panel has gone dark after a power blip.
Bring the numbers with you. A description of the preheat and the hold is worth more on the phone than any adjective, and it decides which parts travel on the van: a sensor and a bake element for the common Wolf families are carried as standard.
What the $89 flat call buys is the visit plus the whole diagnosis — sensor resistance measured against spec, and a probe left on the middle rack through a complete preheat. The repair price is agreed with you before it starts, and the oven does not get handed back until it has held setpoint with a probe watching.
Follow-ups
- How far out is too far out?
- A Wolf oven cycling within about fifteen degrees either side of setpoint, averaging out on target, is behaving normally — that swing is how a thermostat works. Consistently twenty-five degrees or more below setpoint across a full preheat and a steady hold is a fault worth chasing.
- Can I just turn up the calibration offset and live with it?
- You can, and plenty of people do. It masks a drifting sensor rather than correcting it, so the error usually grows and you end up adjusting again. Worse, if the real fault is a failing bake element, the offset makes the oven work harder at the same faulty output.
- Why does the top of a bake brown before the middle sets?
- That is usually air movement rather than temperature: a convection fan not running at the speed it should, a blocked vent path, or a door not sealing square so cool air is drawn across the floor of the cavity. The panel can read perfectly while this happens.
- Does the oven thermometer I bought at the supermarket tell me anything?
- It tells you a direction, not a number. Cheap dial thermometers are often out by fifteen or twenty degrees themselves and they respond slowly. Use one to confirm that something is wrong; do not use its reading as the size of the error.
